I’ve been making this easy Cajun Shrimp Risotto on repeat during the week, so I’m sharing the recipe with you today….
Cajun Shrimp Risotto
Serves: 4
2-3 tablespoons butter’
1 bell pepper, finely chopped
1 stalk celery, finely chopped
1 onion, finely chopped
1 clove garlic, minced
Salt, for seasoning
1 heaping cup arborio rice
2 cups chicken broth, plus more if desired
1 pound peeled and deveined shrimp, fresh or frozen thawed (tails on or off, up to you)
Extra-virgin olive oil, for tossing
1 tablespoon Cajun seasoning
1 lemon, halved
1 bunch scallops, finely sliced
1. Melt your butter in a large skillet over medium heat. Add the bell pepper, celery, onion and garlic. Season with salt and cook, stirring frequently, until soft, about 5 to 7 minutes.
2. Stir in the arborio risotto rice and cook 1 to 2 minutes until shiny. Meanwhile, microwave the chicken broth on HIGH for 2 minutes until hot. Slowly stir the both in the risotto, a little bit at a time, waiting until all of the liquid is absorbed before adding more — this whole process should take you about 20 minutes.
3. Between add the broth to your risotto, toss your shrimp with olive oil, salt and cajun seasoning and spread on a baking sheet. Broil 1 to 2 minutes per side until the shrimp are cooked through and pink. Pour any leftover juice from the baking sheet into your broth cup to stir into your risotto.
4. Once all of the liquid has been stirred into your risotto, season with salt and pepper, stir in your shrimp and the juice of half a lemon. You can stir in up to 1/2 cup additional hot broth to thin out your risotto if you’d like!
5. To serve, divide the risotto among bowls and top with lots of sliced scallions; cut the other half of your lemon into wedges to serve alongside the risotto as well — enjoy!!
