You guys loved the melted ice cream eggnog I made last year, so I thawed all of the ice cream in our freezer to come up with another easy creation. White Russians are just eggnog for egg-haters! And it turns out mint chip ice cream is the perfect secret ingredient for making them winter-fresh. Just zap in the microwave until melted and you have the base for your drink.
If you don't want chocolate bits in your cocktail, strain the melted ice cream through a fine mesh sieve before mixing with the vodka. I added an extra layer of chocolate by coating the classes with white and dark chocolate drizzles before sprinkling the whole thing with crushed candy canes...
PEPPERMINT BARK WHITE RUSSIAN
SERVES: 2 to 4
Melted chocolate, for decorating (optional)
Crushed candy canes, for decorating (optional)
1 pint mint chip ice cream
4 ounces vodka
1. If you'd like to decorate your glasses, melted dark and white chocolate. Dip and / or drizzle around the rim of cold, dry glasses. Sprinkle with crushed candy canes. Let harden in the fridge.
2. Microwave the ice cream on HIGH in 30 second intervals until almost melted; stir until completely melted.
3. Mix ice cream and vodka until combined. Divide among glasses. Garnish with a candy cane, if desired.
