Every once in a while, you make a recipe that’s an instant hit — these Irish Cream Cheesecake cookies, made with Baileys and Ritz Crackers, are something you don’t want to miss.
I can’t explain the hold these chocolate-covered cheesecake cookies have on me. If you’re a fan of creamy, coffee desserts—like tiramisu or an affogato—these are for you.
You don’t need much to make them: beat together cream cheese, confectioners’ sugar, vanilla and a little bit of Baileys to create the cheesecake mixture, then sandwich between buttery Ritz Crackers, cover with melted chocolate and you’re done!
Personally, I would eat these any time of year but if you’re looking for a subtle nod to Saint Patrick’s Day, these would be the perfect St. Patty’s Day dessert.
NO-BAKE BAILEYS CHEESECAKE BITES
SERVES: 8 to 10
8 oz cream cheese, softened
1/2 to 3/4 cup confectioners’ sugar
1 teaspoon vanilla extract
2 tablespoons Baileys
2 sleeves Ritz Crackers
Melted semisweet chocolate, bar or chips
Flaky sea salt, for sprinkling (optional)
Beat the cream cheese, sugar, vanilla and Baileys with a mixer until smooth.
For each bite, sandwich the cheesecake mixture between two Ritz Crackers. Refrigerate until the cheesecake filling is firm, at least 2 hours or overnight.
Dip each bite in melted chocolate to coat. Transfer to a rack; let excess drip off and chill again until set. Sprinkle with sea salt.
